Son’s Hearty Breakfast Day 3: Delicious Stir-Fried Potatoes and Fluffy Pan-Fried Eggs
On the third day of preparing breakfast for my son, I made stir-fried potatoes and pan-fried eggs! Since I hadn’t been to the market, I created this side dish using just the potatoes and eggs I had at home. A delightful meal to start the day.
Main Ingredients: Stir-Fried Potatoes

- 1/2 bell pepper each (e.g., red, yellow – any color you like)

Cooking Instructions
Step 1
First, wash the potatoes thoroughly and peel them. Then, slice them into thin, long strips. Soak these potato strips in cold water for about 10 minutes to remove excess starch. This step is crucial for preventing them from sticking together when stir-fried and for maintaining a crispy texture. Also, remove the seeds from the bell peppers and slice them into thin strips similar in length to the potatoes.
Step 2
Heat about 1-2 tablespoons of cooking oil in a frying pan over medium heat. Add the drained potato strips and begin to stir-fry. Cook until the potatoes start to turn translucent and are slightly tender. Be careful not to use high heat, as this can burn the outside while leaving the inside undercooked.

Once the potatoes are about halfway cooked and becoming translucent, add the sliced bell peppers to the pan. Continue to stir-fry for another 2-3 minutes. It’s best to cook them until they are tender-crisp, not completely soft. Season with a pinch of salt, tasting and adjusting the amount as needed to suit your preference.

Just before turning off the heat, sprinkle generously with sesame seeds. This adds a wonderful nutty aroma and makes the stir-fried potatoes even more delicious! Your tasty stir-fried potato dish is now ready. It’s perfect as a side dish with rice or even as a snack for kids.

Now, let’s make the accompanying pan-fried eggs. In a clean bowl, crack 3 eggs and add a tiny pinch of salt. Whisk them together. Heat a separate frying pan with a generous amount of cooking oil. Pour in about half a ladleful of the whisked egg mixture at a time and cook until golden brown on both sides. Aim for relatively thin omelets, as they cook more evenly and are easier to eat.
