Ingredients
  • 130g fresh oysters
  • 2 large eggs
  • A little onion (finely chopped)
  • A little carrot (finely chopped)
  • A little green part of scallion (finely chopped)
  • 5 Tbsp tempura flour (or Korean pancake mix/all-purpose flour)
  • A pinch of black pepper
  • A pinch of salt

Cooking Instructions

Step 1

Gently squeeze the oysters with a little coarse salt. This helps to remove impurities and any unwanted odors. Since oysters are delicate, be gentle and rinse them 2-3 times in lightly salted water to clean them without breaking them apart.

Step 2

After washing, drain the oysters thoroughly in a sieve. Ensure as much water as possible is removed, as excess moisture can make the pancakes soggy. You can also gently pat them dry with paper towels.

Step 3

Finely chop the carrot, onion, and scallion. Crack the 2 eggs into a bowl, add the chopped vegetables, a pinch of black pepper, and a pinch of salt. Whisk gently until well combined, but try not to over-whisk and create too many bubbles.

Step 4

Lightly coat the drained oysters with the tempura flour. This coating helps the batter adhere and creates a crispier texture. While tempura flour is recommended for crispiness, you can substitute it with Korean pancake mix (buchim garu) or all-purpose flour for a slightly different texture.

Step 5

Gently dip the floured oysters into the prepared egg mixture. It’s best to use a spoon rather than chopsticks to coat the oysters, to avoid breaking them. Ensure each oyster is evenly coated with the egg batter.

Step 6

Heat a pan over medium-low heat and add enough oil to coat the bottom. Carefully place the coated oysters onto the hot pan, ensuring they don’t overlap.
