Essential Ingredients
- Beef (for Bulgogi) 300g
- Green Onions 3 stalks
- Onion 1/2
- King Oyster Mushrooms 50g
- Cheongyang Pepper (Korean chili pepper) 1
- Bean Sprouts 100g
- Perilla Leaves 10 leaves
- Lettuce 10 leaves
Cooking Instructions
Step 1
First, gently pat the beef dry with paper towels to remove any excess blood. This step is crucial for a clean flavor. Cut the beef into roughly three portions. Place the beef in a bowl, add 2 tablespoons of bulgogi sauce, and mix well by hand. Let it marinate for 10 minutes to allow the flavors to meld beautifully.
Step 2
Separate the green leafy parts from the white base of the green onions. Thinly slice the outer green parts into strips for garnish. Cut the white parts in half lengthwise, then chop them into 4cm pieces. Trim the root ends of the king oyster mushrooms and pull them apart into smaller strands. Finely chop the Cheongyang pepper for a touch of heat. Peel and thinly slice the onion.
Step 3
Rinse the bean sprouts thoroughly under cold running water. Bring a pot of water to a boil, then add the washed bean sprouts. Blanch them briefly – overcooking will make them mushy, so aim for a crisp texture. Immediately drain the blanched bean sprouts and rinse them under cold water to stop the cooking process. Drain them well in a colander.
Step 4
Now, let’s stir-fry! Heat a pan over medium heat and add a splash of cooking oil. Add the sliced onion, king oyster mushrooms, and the white parts of the green onions. Stir-fry for about 1 minute until fragrant. Once the onions start to turn translucent, add the marinated beef and chopped Cheongyang pepper. Continue to stir-fry for another 3 minutes until the beef is cooked through. Turn off the heat, drizzle in 1 tablespoon of sesame oil, and mix everything evenly for a nutty aroma.
Step 5
Arrange the blanched bean sprouts and sliced green onions attractively on a serving plate or in the pan. Generously spoon the delicious stir-fried bulgogi over the top. Your hearty and flavorful Bean Sprout Bulgogi is now ready!
Step 6
Finally, prepare the fresh greens for wrapping. Wash the perilla leaves and lettuce leaves under running water and gently shake off any excess moisture. Arrange the finished Bean Sprout Bulgogi on a platter with the perilla leaves and lettuce. Serve with ssamjang on the side for an even more delightful meal. To enjoy, take a lettuce or perilla leaf, add some bulgogi, a dollop of ssamjang, and your favorite accompaniments like garlic or pepper, and wrap it up for a perfect bite!
