Ingredients
  • 160g Roasted Black Sesame Seeds (roast them well for maximum flavor)
  • 60g Roasted Peanuts (shelled and ready)
  • 30g Natural Sweetener (Natvia, a blend of stevia and erythritol)
  • 50g Oligosaccharide (for sweetness and a glossy finish)
  • 10g Water (optional: use for a firmer, crispier texture)

Cooking Instructions

Step 1

Lightly grease your chosen mold or baking pan with sesame oil. This step is crucial for preventing the brittle from sticking, ensuring easy removal later.

Step 2

Combine the roasted black sesame seeds and the shelled roasted peanuts in a bowl. Mix them thoroughly. Feel free to substitute peanuts with your favorite toasted nuts like walnuts or almonds for a personalized touch.

Step 3

In a saucepan, combine the oligosaccharide and the natural sweetener (Natvia). If you prefer a harder, crispier brittle, add 10g of water. For a softer, chewier consistency, omit the water.

Step 4

Place the saucepan over medium heat. Stir until the sweeteners dissolve and begin to bubble. Once boiling, continue to simmer for about 1-2 minutes, allowing the syrup to thicken slightly in the center.

Step 5

Reduce the heat to low. Immediately add the mixed black sesame seeds and peanuts to the syrup. Using a spatula, quickly stir to coat all the seeds and nuts evenly with the syrup.

Step 6

Continue stirring over low heat for about 2-3 minutes, or until the mixture becomes sticky and starts to clump together. Be careful not to overcook, as it can burn.

Step 7

Pour the mixture into the prepared mold or pan. Cover the top with parchment paper. Using a rolling pin, scraper, or the bottom of a flat glass, press down firmly and evenly to flatten the brittle to your desired thickness. A thinner layer will result in a crispier brittle.

Step 8

While the brittle is still slightly warm, place the mold in the refrigerator for about 20 minutes to set. Once firm, carefully invert the mold to release the brittle.

Step 9

Using a sharp knife, cut the brittle into your desired shapes and sizes. Store the finished black sesame peanut brittle in an airtight container in the refrigerator to maintain its crispiness and flavor.
