Step 1
First, thinly slice the onion to be used directly in the dish into fine julienne. Cut the onion for the marinade into pieces suitable for blending in a mixer.

To gently remove the pungent and spicy taste of the onion, soak the sliced onions in cold water for about 5 to 10 minutes. Rinsing them once or twice during this time will further enhance the result.

After soaking, drain the onions thoroughly using a colander. It’s crucial to remove all excess water, as remaining moisture can dilute the seasoning.

Now, it’s time to make the delicious all-purpose seasoning. While using a scale for precise measurements is ideal, using a soju shot glass (approximately 50ml), commonly found in Korean households, makes measuring convenient. Using a paper soju cup ensures a cleaner measurement.

The ingredients for the all-purpose seasoning are 40g of sugar, 50ml of sesame oil, 60ml of grapeseed oil, and 180ml of soy sauce. Conveniently, you can put all these ingredients directly into a mixer and blend them. If you don’t have grapeseed oil, regular vegetable oil or other plant-based oils can be used. However, perilla oil, which has a strong flavor, can overpower the onion’s natural taste, so it’s best to avoid it.

When adding ingredients to a mixer, it’s best to add the liquid ingredients first, followed by the solid ingredients. This allows the blender blades to rotate smoothly and blend the ingredients more effectively. Therefore, pour in the liquid seasonings like soy sauce, sesame oil, and grapeseed oil first, then add the prepared onion.

Press the blender button and blend until the onion is finely pureed. Ensure it’s smooth without any lumps.
