Main Ingredients
  • 1 fresh mentaiko (pollock roe), about 50-70g
  • 1 long baguette (or 6-7 mini baguettes)

Mentaiko Mayo Sauce
  • 1 tsp minced garlic (you can add a bit more if you love garlic flavor, but start with 1 tsp for your first try!)
  • 2 Tbsp mayonnaise (adds a creamy richness)
  • 2 Tbsp honey (for sweetness and a lovely sheen)

Cooking Instructions

Step 1

Prepare the mentaiko: carefully remove the tough outer membrane using the back of a knife or a chopstick, and thoroughly scrape out any white connective tissues. Gently mash the roe with a fork or spoon to get a smooth texture for the sauce.

Step 2

In a bowl, add the prepared mentaiko. Then, add 1 tsp of minced garlic. (Tip: If you prefer a stronger garlic taste, feel free to add a little more. However, for your first attempt, starting with 1 tsp is recommended to adjust to your preference.)

Step 3

Add 2 Tbsp of mayonnaise to the bowl. Using a good quality mayonnaise will enhance the overall flavor of the sauce.

Step 4

Next, add 2 Tbsp of honey. Stir all the ingredients together thoroughly with a spatula or fork until well combined and smooth. Once the sauce is homogenous, microwave it for about 2 minutes to help the flavors meld together. (Adjust microwave time based on your appliance.)

Step 5

Slice the baguette into approximately 1.5 to 2 cm thick pieces. (Avoid slicing too thinly to prevent breakage.) Generously spread the prepared mentaiko mayo sauce over each slice of baguette. Preheat your oven to 180°C (350°F). Place the prepared baguettes on a baking sheet and bake for about 15 minutes, or until golden brown and lightly toasted. They should be crispy on the outside and soft on the inside when done! (Baking time may vary depending on your oven; keep an eye on them to prevent burning.)
