Crispy & Moist Crumble Cake

Cake Batter Ingredients
- 180g All-purpose flour (for a tender cake crumb)
- 80g Granulated sugar (adjust to taste)
- 100g Cold butter, cut into small cubes
- 130g Corn syrup or glucose syrup (adds moisture and shine)
- 1 large Egg, at room temperature
- 100g Boiled water, warm
- 1/2 tsp Baking soda (helps the cake rise)
Cooking Instructions
Step 1
First, let’s prepare the crumble topping. In a bowl, combine 180g of all-purpose flour and 80g of sugar. Add 100g of cold, cubed butter. Using a food processor, or by rubbing the butter into the flour and sugar mixture with your fingertips, create a crumbly, sandy texture similar to streusel. If you don’t have a food processor, a pastry blender or scraper works well. Set aside about 50g of this crumble mixture in a separate bowl and keep it chilled. To the remaining crumble mixture, add 130g of corn syrup (or glucose syrup), 1 room temperature egg, 100g of warm boiled water, and 1/2 tsp of baking soda. Mix with a spatula or whisk until smooth and well combined to form the batter. The consistency will be similar to pancake batter, so don’t be surprised if it differs from typical cake batters!
Step 2
Pour the prepared batter into greased muffin tins or a cake pan, filling them about two-thirds full. Sprinkle the reserved chilled crumble mixture evenly over the top of the cake batter. Bake in a preheated oven at 175°C (350°F). For muffin tins, bake for approximately 25-28 minutes. For a cake pan, baking time will be around 35-45 minutes, depending on the batter’s depth. The cake is done when a skewer inserted into the center comes out clean.
