  • 1/3 bowl of cooked rice
  • 50g tofu
  • 1/4 tomato (or 1 small tomato)
  • 1/6 cucumber
  • 1 fresh perilla leaf (깻잎)

Cooking Instructions

Step 1

First, prepare a square-shaped frying pan. Spread the 1/3 bowl of cooked rice thinly and evenly in the pan using a spatula. Cook over medium-low heat for about 10 minutes, or until the edges of the rice turn golden brown and you hear a crispy sound. It’s important to check frequently to prevent burning.

Step 2

In a separate bowl, place 50g of tofu. Use the back of a knife to mash the tofu until it’s smooth and free of lumps. You can also use a fork or chopsticks for this step.

Step 3

Add a pinch of salt and a pinch of black pepper to the mashed tofu and mix well to season. The creamy texture of the tofu spread will complement the crispy nurungji perfectly.

Step 4

Prepare 1 fresh perilla leaf (깻잎). Remove the tough stem and roll the leaf tightly. Then, slice it into very thin strips. This shredding method ensures a pleasant texture when used as a topping.

Step 5

Carefully transfer the well-cooked and crispy nurungji onto your serving plate. Then, spread the seasoned, creamy tofu spread thinly over the nurungji using a spoon or knife.

Step 6

Wash the 1/4 tomato, slice it thinly into rounds, and then cut each round in half. Wash the 1/6 cucumber and slice it diagonally. Arrange the prepared tomato and cucumber slices decoratively, alternating them on top of the nurungji.

Step 7

Gently loosen the thinly sliced perilla leaves with your fingers to separate them. Arrange the loosened perilla leaves pile d’on the tomatoes and cucumbers for both visual appeal and better eating.

Step 8

Finally, drizzle 1 teaspoon of balsamic glaze over the pizza, according to your preference, to enhance the flavor. The rich balsamic glaze will beautifully complement the fresh vegetables and the crispy nurungji base.
