Ingredients
  • 5 Dried Persimmons
  • 1 String Cheese Stick
  • 50g Mozzarella Cheese
  • 2 Eggs
  • Breadcrumbs, as needed
  • Salt, a pinch
  • Cooking Oil, for frying

Cooking Instructions

Step 1

Prepare all your ingredients. Choose plump, soft dried persimmons for the best frying results.

Step 2

Remove the tough stems from 4 of the dried persimmons. Make a lengthwise slit in the center of each persimmon to create an opening. For the remaining 1 dried persimmon, which will be fried without cheese, thinly slice it into strips. This way, you can enjoy both the pure flavor of fried persimmon and the cheesy version.

Step 3

Gently open the slit in the prepared dried persimmons and insert a string cheese stick into the center. The chewy texture of the persimmon and the slightly salty flavor of the cheese will complement each other beautifully.

Step 4

Next, generously fill the opening with mozzarella cheese. As the cheese melts, it will ooze into the persimmon, creating an even richer taste. Once filled, carefully fold the persimmon to enclose the cheese, ensuring it won’t leak out during frying.

Step 5

Crack the 2 eggs into a bowl. Remove the chalazae (the white, stringy bits) and add a pinch of salt. Whisk well with a fork or whisk until smooth. Dip the cheese-filled persimmons into the egg mixture, ensuring they are fully coated with a thin layer of egg. This egg coating will help the breadcrumbs adhere.

Step 6

After coating with egg, roll the persimmons in breadcrumbs, ensuring an even and complete coating. Press gently to help the breadcrumbs stick well. A good breadcrumb coating is key to achieving a crispy texture.

Step 7

Pour enough cooking oil into a deep pan to cover the persimmons and heat it to approximately 150-160°C (300-320°F). Be cautious not to overheat the oil; too high a temperature will burn the outside before the inside is cooked. Carefully place the breaded persimmons (both those with cheese and the plain sliced ones) into the hot oil, one by one. Fry for about 1-2 minutes, or until golden brown and crispy, just long enough for the cheese to melt. Avoid over-frying, as this can make the persimmons tough.

Step 8

Once fried to a beautiful golden brown, remove the dried persimmon fries from the oil and place them on a wire rack or paper towels to drain any excess oil. This step ensures they remain wonderfully crispy. Serve immediately while warm for the best experience!

Step 9

Enjoy these versatile treats! You can opt for the cheesy version for an indulgent snack, or simply fry the sliced persimmons to appreciate their natural sweetness and chewy texture. Try making both to offer a delightful variety!
