Step 2

Rinse the julienned sweet potato strips gently under cold water to remove excess starch; this will help make the fries crispier. Drain them thoroughly. Begin to roll the sweet potato strips tightly, forming them into a log shape. You can use multiple strips together to create a thicker, more substantial roll. To keep the rolls intact during frying, secure them with toothpicks or small skewers.

Step 3

Heat a generous amount of cooking oil in a pot or deep fryer to about 170°C (340°F). Maintaining the correct oil temperature is crucial: too low and the fries will absorb too much oil, too high and they’ll burn quickly. Carefully place the prepared sweet potato rolls into the hot oil. Fry them for about 2-3 minutes, or until they are golden brown and wonderfully crisp. Once fried, remove the rolls and drain them on a wire rack or paper towels to absorb excess oil.

In a small saucepan, combine the 2 tablespoons of sugar and 2 tablespoons of water. Heat over low to medium heat, stirring until the sugar is completely dissolved. Once the syrup begins to thicken slightly, add the fried sweet potato rolls. Toss them quickly to coat evenly with the syrup. Be careful not to overcook the syrup, as it can become too sticky.
