  • 1 large sweet potato

Seasoning
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp sugar
  • 1 Tbsp chopped green onion
  • 0.5 Tbsp salt
  • 0.5 Tbsp vinegar
  • 0.5 Tbsp fish sauce
  • Minced garlic (optional, to taste)
  • 1 tsp sesame oil

Cooking Instructions

Step 1

First, thoroughly peel the sweet potato. If the skin is very clean and thin, you can choose to leave it on after washing it well to remove any dirt or debris.

Step 2

Using a mandoline slicer or a knife, thinly julienne the peeled sweet potato. Be careful not to cut them too thick, as they might not cook through evenly. Once julienned, soak the sweet potato strands in cold water for about 5 minutes. Afterward, drain them completely, ensuring all excess water is removed. This step is crucial for achieving a crisp texture.

Step 3

After draining the julienned sweet potato, add all the seasoning ingredients (gochugaru, sugar, chopped green onion, salt, vinegar, fish sauce, and minced garlic) to a bowl. Gently toss and mix everything together by hand until the sweet potato is evenly coated with the seasonings. Avoid overmixing or squeezing too hard, as this can make the sweet potato mushy.

Step 4

Finally, add 1 teaspoon of sesame oil and give it one last gentle toss to combine. Your delicious raw sweet potato salad is now ready! While it’s delicious served immediately, chilling it in the refrigerator for a short while before serving will enhance its refreshing flavor even further.
