Spring is here, and with the warmer weather, you might find yourself feeling a bit sluggish or lacking appetite. That’s the perfect time for a refreshing spring vegetable dish! This Stone Crop and Apple Salad offers a delightful balance of the slightly bitter stone crop and the sweet-tartness of apples. It’s a vibrant and crisp dish that will awaken your senses.

Main Ingredients
  • 120g Stone Crop (Sedum)
  • 1/4 Apple

Dressing
  • 1 Tbsp Soy Sauce (or 1 Tbsp Clear Soy Sauce)
  • 2 Tbsp Plum Extract (Maesil Extract)
  • 0.5 Tbsp Red Pepper Flakes (Gochugaru)
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

Stone crop is delicate and can easily become mushy, so it’s best to prepare it as soon as possible after purchasing. I have a habit of soaking raw vegetables in a light vinegar water solution for about 5 minutes for sanitation purposes, so I did the same with the stone crop. When washing, gently swish them around with your hands to avoid bruising.

Step 2

Drain the washed stone crop thoroughly in a colander. If the stems are long, you can trim them to a more manageable size for eating. Since I bought pre-trimmed stone crop from the supermarket, I didn’t need to do much extra preparation.

Step 3

For this refreshing spring salad, wash the 1/4 apple thoroughly and cut it into bite-sized pieces, leaving the skin on for added texture and nutrients. Now, let’s prepare the dressing.

Add 2 tablespoons of plum extract to a mixing bowl. Plum extract adds a natural sweetness and depth of flavor.

Add 1 tablespoon of soy sauce. If you prefer to use clear soy sauce (Guk-ganjang), you can use 1 tablespoon of that instead. I used aged soy sauce that I had on hand. The type of soy sauce you use can subtly alter the final taste, so feel free to choose based on your preference.

Pour in 1 tablespoon of sesame oil for a nutty aroma.

Add 0.5 tablespoon of red pepper flakes (gochugaru) for a touch of spice and color. Feel free to adjust the amount to your liking if you prefer it spicier.

Finally, add 1 tablespoon of toasted sesame seeds for texture and a nutty finish. Mix all the dressing ingredients well until combined. Your delicious dressing for the Stone Crop and Apple Salad is ready!
