How to Make a Very Spicy Kkakdugi Bibim Guksu (Warning: It’s HOT!)
Lately, I’ve been craving a really spicy bibim guksu… So, I finally decided to make it extra spicy! ^^ This recipe is perfect for when you want a dish that satisfies that spicy craving. The addition of crunchy kkakdugi (diced radish kimchi) adds a delightful texture and depth of flavor. Get ready for a flavorful kick!
Noodles
- Somen noodles (enough to make a 500-won coin size portion per person)
Vegetables & Kimchi
- Shredded aged kimchi 2 Tbsp
- Shredded kkakdugi (diced radish kimchi) 1 Tbsp
- Shredded aged kimchi 2 Tbsp
- Shredded kkakdugi (diced radish kimchi) 1 Tbsp
Cooking Instructions
Step 1
First, let’s cook the somen noodles, which are the base of our bibim guksu. Bring plenty of water to a boil. Add the somen noodles and stir gently to prevent them from sticking. As the water comes to a boil, add a splash of cold water – this trick helps make the noodles perfectly chewy and firm. Cook for about 3-4 minutes, then drain and rinse thoroughly under cold water. Make sure to drain all the excess water.
Step 2
Now, let’s prepare the flavorful bibim sauce! In a bowl, combine the gochujang base sauce, gochujang, minced garlic, sugar, chopped red chili, and chopped green onion. Mix everything well. Then, add the shredded kimchi and shredded kkakdugi to the sauce and combine. (A little tip from me: I prefer a less sour, more savory and spicy flavor, so I used a bit less of the gochujang base sauce. Feel free to adjust it to your liking!)
Step 3
Add the prepared sauce to the cooked somen noodles and mix thoroughly. It’s important to ensure every strand of noodle is coated evenly with the sauce. For the finishing touches, drizzle in the sesame oil for a nutty richness, and just before serving, add the perilla oil for a fresh, aromatic scent and sprinkle with crushed sesame seeds. (My personal secret: Sesame oil adds a deep nutty flavor to the sauce, while perilla oil, added at the end, preserves its fresh fragrance. This combination really elevates the overall taste!)
