Cookie Dough Ingredients
  • 100g cake flour (or all-purpose flour)
  • 40g unsalted butter, softened to room temperature
  • 40g granulated sugar
  • 1 large egg yolk (approx. 18-20g), at room temperature
  • 1/2 tsp vanilla extract (optional, for enhanced flavor)

Cooking Instructions

Step 1

In a mixing bowl, cream the softened butter until smooth. You can use a hand mixer or a whisk. Ensure the butter is at room temperature for best results. Add the granulated sugar and whip together with the butter until the mixture is light and pale yellow, resembling a creamy consistency (about 2-3 minutes). Next, incorporate the egg yolk and vanilla extract, mixing well until fully combined and avoiding any separation. Finally, sift the cake flour into the bowl. Using a spatula, gently fold the flour into the wet ingredients until just combined, forming a dough. Be careful not to overmix, as this can make the cookies tough. Once the dough comes together, wrap it in plastic wrap and chill in the refrigerator for about 30 minutes. This makes the dough easier to handle. (Tip: For a shortcut, you can substitute this step with a store-bought cookie mix or pre-made frozen cookie dough.)

Step 2

Take about 10-15g portions of the chilled dough and roll them into balls or shape them as desired on a baking sheet lined with parchment paper. Aim for a thickness of about 0.5 cm; thinner cookies might break easily. Once the cookie dough is placed on the baking sheet, arrange the popcorn pieces on top. Gently press the popcorn into the dough to help them adhere, or slightly shape the dough around the popcorn kernels. (Tip: For an extra layer of flavor and texture, consider adding chocolate chips or finely chopped nuts on top of the popcorn before baking.)

Step 3

Bake in a preheated oven at 180°C (350°F) for 7-8 minutes, or until the edges of the cookies turn golden brown and the popcorn shows a slight hint of browning. Keep an eye on them, as baking times can vary depending on your oven. Once baked, carefully remove the cookies from the oven and transfer them from the baking sheet to a wire rack to cool completely. They will be fragile when warm but will crisp up beautifully as they cool, offering a delightful combination of popcorn crunch and cookie sweetness.
