Enjoy a quiet morning by baking these delightful chocolate muffins. The warm, freshly baked muffins, with their rich chocolate aroma and tender crumb, will make your day even brighter. This recipe is detailed and beginner-friendly, ensuring a delicious outcome every time.
Ingredients
- 155g cake flour (all-purpose flour can also be used)
- 10g unsweetened cocoa powder (for a rich chocolate flavor)
- 3g baking powder (for leavening)
- 155g unsalted butter, softened to room temperature
- 150g granulated sugar
- 3 large eggs, at room temperature
- 70g chocolate chips (adjust to your preference)
- A small amount of sliced almonds for topping (optional)
Cooking Instructions
Step 1
Begin by creaming the softened butter in a mixing bowl using a whisk or electric mixer until it’s light and fluffy. Ensure the butter is at room temperature for best results.
Step 2
Gradually add the sugar to the creamed butter, mixing well after each addition until fully incorporated. Once the butter and sugar are well combined, lightly beat the eggs in a separate bowl, then slowly pour them into the butter mixture while whisking continuously. Mix until the batter is smooth and emulsified, resembling a creamy mayonnaise consistency. This prevents the batter from separating.
Step 3
Sift the cake flour, cocoa powder, and baking powder together into a fine-mesh sieve. Sift them again directly over the wet ingredients. Gently fold the dry ingredients into the wet ingredients using a spatula until just combined. Be careful not to overmix, as this can result in tough muffins.
Step 4
Add the chocolate chips to the batter and gently fold them in until evenly distributed. If the batter seems too stiff, you can add a tablespoon or two of milk to reach a good consistency. The batter should be thick but pourable.
Step 5
Spoon the batter into a piping bag and fill prepared muffin liners in a muffin tin to about 75% full. (This recipe yields approximately 9 standard-sized muffins with a 5.5cm base diameter). Optionally, sprinkle sliced almonds on top for added texture and flavor. Bake in a preheated oven at 180°C (350°F) for 25-28 minutes, or until a skewer inserted into the center comes out clean.
Step 6
The wonderful aroma of baking muffins fills the air! Carefully open the oven door to check on the golden-brown muffins. I couldn’t resist taking a peek inside one while it was still warm – a perfectly moist and rich chocolate muffin awaits!
