Main Ingredients
  • 17-20 fresh live abalones
  • 1/2 cup mirin (rice wine) for removing fishy odor

Abalone Jang Sauce Ingredients
  • 800ml water
  • 600ml soy sauce
  • 1/2 fresh apple
  • 1/2 sweet onion
  • 10g ginger (about thumbnail size)
  • 1 cup mirin (rice wine) for sauce
  • 1 Tbsp whole peppercorns
  • 1/2 green onion (white part mainly)
  • 10 cloves garlic
  • 10g dried kelp (dashima, about 5x5cm)
  • 4 Tbsp plum extract (for sweetness and flavor)

Cooking Instructions

Step 1

Prepare the delicious abalone jang sauce. In a pot, combine 800ml water, 600ml soy sauce, 1/2 apple (cut into large pieces), 1/2 onion (cut into large pieces), 10g ginger (sliced), 1 cup mirin, 1 Tbsp whole peppercorns, 1/2 green onion (cut into large pieces), 10 cloves garlic, 10g dried kelp, and 4 Tbsp plum extract. (Tip: You can also use kelp soy sauce or 2 Tbsp minced garlic. Cutting the apple, onion, and green onion into large pieces makes them easier to remove later.) Bring to a boil over high heat.

Step 2

Once the sauce begins to boil, reduce the heat to medium and simmer for about 30 minutes to allow the flavors to fully infuse.

Step 3

While the sauce is simmering, prepare the abalones. Use a clean toothbrush to thoroughly scrub away any black residue from the abalone shells and between the meat and shell. This step helps to reduce any gamey flavor. Arrange the cleaned abalones in a wide dish and pour 1/2 cup of mirin evenly over them. Let them sit for about 5 minutes to further remove any unpleasant odors.

Step 4

Steam the abalones in a steamer for 20 minutes. (I steamed mine for 25 minutes for a chewier texture.)

I highly recommend this steamer, especially for those who are impatient. It perfectly steams all kinds of ingredients, from vegetables and fish to meat.

Step 6

Unlike conventional steamers that require waiting for the water to boil before adding ingredients, this steamer generates hot steam within 2-3 seconds of turning the dial after adding ingredients – no waiting required! It’s a great recommendation for busy home cooks!

Step 7

Additionally, ingredients like onions or lemons that might not be used up at once can be stored in containers like these. They help maintain freshness, are easy to find in the refrigerator, and add a lovely touch to your kitchen. ^^

Step 8

Once the abalones are perfectly steamed, remove them from the steamer. Cover them with plastic wrap and let them cool completely in the refrigerator. Chilling them thoroughly ensures they absorb the marinade well and improves their texture.

Step 9

Strain the soy sauce mixture that has been simmering for 30 minutes through a sieve to remove the solids. (Tip: If you used minced garlic, strain through a fine-mesh sieve.) Once the strained sauce has cooled completely, mix in 2 cups of cider. The cider’s crispness enhances the sauce’s flavor and adds a pleasant sweetness.

Step 10

Place the chilled abalones in your chosen container. Pour the cooled sauce over the abalones, cover, and let it marinate in the refrigerator for at least one day. Your delicious abalone jang is ready! Enjoy this flavorful dish that’s perfect for regaining energy during the sluggish spring season!
