This braised pork belly teriyaki was made at the request of my younger son, who is recovering and wanted something like the braised short ribs. His simple wish to eat meat, inspired by his older brother’s dish, touched my heart. He ate an entire pan by himself, proving how delicious it was even while he was unwell. This dish is a nutritious side that even patients can enjoy. The rich, savory glaze perfectly complements rice, making it a special meal for the whole family. Main Ingredients
  • Pork Belly: 2 cups (cut into bite-sized pieces)

Teriyaki Sauce Ingredients
  • Teriyaki Sauce: 3 Tbsp
  • Pickled Onion Soy Sauce: 4 Tbsp (or regular soy sauce if unavailable)
  • Minced Garlic: 1 tsp
  • Cooking Sake (Mirin): 1 Tbsp
  • Honey: 1 Tbsp
  • Black Pepper: a pinch

Cooking Instructions

Step 1

First, wash the pork belly thoroughly under running water. Then, cut it into small, bite-sized pieces, about 2 cm in size, so it’s easy to pick up with chopsticks. Avoid cutting it too small, as it might crumble when cooked.

Step 2

Heat a pan over medium heat and add all the cut pork belly. If too much fat renders out, you can gently wipe some of it away with a paper towel to reduce greasiness.

Step 3

Once the pork belly starts to release its fat, add the minced garlic and cooking sake (mirin). Stir-fry them together. The garlic will help eliminate any gamey odor, and the mirin will enhance the flavor. Continue to sauté until the pork belly is lightly browned.

Step 4

When the pork belly is about halfway cooked, add the teriyaki sauce and the pickled onion soy sauce (or regular soy sauce). Mix well to ensure the sauce coats the meat evenly. You can shake the pan or stir with a spatula.

Step 5

Reduce the heat to medium-low and let the sauce simmer and reduce until it thickens and coats the pork belly. Stir occasionally to prevent sticking, allowing the sauce to penetrate the meat and develop a delicious glaze.

Step 6

Once the pork is fully cooked and the sauce has thickened, turn off the heat. Stir in the honey and black pepper while the pan is still hot. This residual heat will lightly cook the honey and pepper, adding a subtle sweetness and enhancing the aroma.

Step 7

Transfer the finished braised pork belly teriyaki to a warmed serving plate or a sizzling platter. Serve immediately while hot for the best flavor. This dish is also excellent served over a bowl of steamed rice as a donburi.
