Ingredients
  • 1kg prepared sea eel
  • 1 Tbsp soy sauce
  • 1 Tbsp mirin (rice wine)
  • 1 Tbsp plum extract (or syrup)
  • 1 Tbsp minced garlic
  • 2 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp oligosaccharide (or corn syrup)
  • A pinch of black pepper
  • A pinch of sesame seeds
  • 1 tsp ginger powder

Cooking Instructions

Step 1

First, rinse the cleaned sea eel thoroughly under cold running water multiple times. Ensuring it’s clean of any blood or debris is the first step to reducing any fishy odor.

Step 2

Now, let’s make the eel glaze. In a bowl, add 1 tablespoon of soy sauce.

Step 3

Add 1 tablespoon of mirin (or rice wine) to help remove any gaminess and enhance the flavor.

Step 4

Add 1 tablespoon of plum extract (or syrup) for a touch of sweetness and a fragrant aroma.

Step 5

Add 1 tablespoon of minced garlic for a burst of savory flavor. Garlic greatly boosts the umami of the sauce.

Step 6

Add 2 tablespoons of gochujang (Korean chili paste), the key ingredient for a spicy kick.

Step 7

Add 1 tablespoon of oligosaccharide (or corn syrup) to give it a beautiful sheen and balance the sweetness.

Step 8

Add a pinch of black pepper to season the glaze and enhance the eel’s flavor. Be careful not to add too much.

Step 9

Add a pinch of sesame seeds for a nutty aroma. You can mix these into the sauce or use them as a garnish later.

Step 10

Finally, add 1 teaspoon of ginger powder for a subtle, zesty note. Ginger is very effective at neutralizing any fishy smell in eel.

Step 11

Whisk or stir all the prepared sauce ingredients together with a spoon or whisk until well combined, creating a delicious eel glaze. Ensure all ingredients are uniformly mixed.

Step 12

Now it’s time to grill the eel. Add a generous amount of grapeseed oil (or cooking oil) to a frying pan and preheat over medium-low heat. Make sure the pan is well-oiled to prevent the eel from sticking.

Step 13

Place the cleaned eel pieces into the preheated frying pan. Grill one side until it’s golden brown and looks appetizing, then flip. Cooking over medium-low heat ensures the eel cooks through evenly without burning.

Step 14

Once the eel is partially cooked, generously brush the prepared savory glaze all over it. Keep the heat on low to prevent the glaze from burning, turning the eel frequently and applying more glaze as needed to ensure it’s coated evenly. Be very mindful of the heat to avoid burning.

Step 15

When the glaze has nicely thickened and the eel is fully cooked, cut it into bite-sized pieces. Cutting them too small might affect the texture, so aim for a comfortable size.

Step 16

Arrange the beautifully grilled eel pieces neatly on a serving plate. For an extra touch, you can add some garnish like fresh vegetables, more sesame seeds, or perilla leaves, creating a more impressive meal.

Step 17

The natural sea eel from Yamtable is excellent for boosting energy and stamina. It’s rich in unsaturated fatty acids, high-quality protein, and various vitamins, making it a perfect and healthy meal for everyone in the family. Enjoy and stay healthy!
