How to Make Fragrant Hallabong Syrup
My sister gave me some Hallabong (a type of citrus fruit) that weren’t quite perfect for selling. She suggested I make tea with them! After the kids ate a few, I decided to make this Hallabong syrup with the rest. It’s wonderfully sweet and tangy, perfect for a refreshing drink.
Ingredients
- 10 Hallabong (approx. 1kg)
- 12 ladles (approx. 1.2kg) organic brown sugar (a 1:1 ratio with Hallabong is recommended)
Cooking Instructions
Step 1
First, wash and peel the Hallabong. For each Hallabong, add one ladle of organic brown sugar. Then, add an additional two ladles of sugar for the entire batch and mix everything together until well combined. A 1:1 ratio of Hallabong to sugar is generally good, but feel free to adjust to your taste.
Step 2
Carefully pack the Hallabong and sugar mixture into a clean, sterilized glass jar. Pressing it down gently can help reduce air exposure, prolonging its shelf life. If sugar settles at the bottom, stir it well each time you use the syrup to ensure it mixes with the fruit.
Step 3
Allow the Hallabong syrup to sit at room temperature for about a day, then refrigerate for approximately 3 days to let it mature. Once ready, you can enjoy it as a warm Hallabong tea by mixing it with hot water, or make a refreshing Hallabong ade by combining it with sparkling water. You can also add honey if you prefer it sweeter.
