Whip up a fantastic Pork Rib Tteokbokki using leftover pork ribs, tteok (rice cakes), and vegetables from your fridge. The sweet and savory sauce combined with chewy tteok and tender pork ribs makes it an ideal nutritious snack for children, and even a special treat for any occasion. Prepare it simply and enjoy a delicious meal!
Main Ingredients
- Tteok (rice cakes) 3 handfuls (approx. 300g)
- Pork rib 1 piece (approx. 200g, marinated or cooked)
- Carrot 1/4
- Green chili pepper 1
- Whole garlic cloves 3

- Soy sauce 100ml
- Sugar 50ml
- Oligosaccharide syrup 50ml
- Minced garlic 1 Tbsp
- Sesame oil 1/2 Tbsp
- Sesame seeds 1/2 Tbsp

Cooking Instructions
Step 1
For a chewy texture, blanch the tteok (rice cakes) in boiling water for about 2 minutes. Be careful not to overcook them, as they might become too soft.
Step 2
While the tteok is blanching, prepare the vegetables and pork ribs. Thinly slice the whole garlic cloves. Remove seeds from the green chili pepper and cut into thick julienne strips. Slice the carrot into long, thin pieces, then julienne. If using raw pork ribs, ensure they are marinated or cooked beforehand. Cut the prepared pork ribs into long strips.
Step 3
Drain the blanched tteok in a sieve and rinse lightly under cold water to remove excess starch. Toss the drained tteok with a little sesame oil and soy sauce to coat. This step, called ‘yujang-cheori’, prevents the tteok from sticking together and adds a nice sheen.
Step 4
Measure out all the sauce ingredients and mix them together in a bowl to create the sauce beforehand. Stir well to ensure everything is combined.
Step 5
Lightly grease a wide, deep pan with cooking oil. Add the sliced garlic and sauté over low heat until fragrant. Be mindful not to burn the garlic; cook it gently.
Step 6
Once the garlic is fragrant, add the pork ribs and stir-fry over medium heat until the meat is fully cooked through. Ensure all pinkness is gone and the ribs are lightly browned.
Step 7
When the pork ribs are cooked, add the carrots and green chili peppers. Continue stir-frying over medium heat until the vegetables are slightly tender but still have a bit of crunch. We want to maintain their crispness.
Step 8
Test the carrots by bending them; when they are slightly pliable, pour in the pre-made sauce. Avoid overcooking the vegetables at this stage.
Step 9
Once the sauce begins to boil, add the coated tteok. Increase the heat to high and stir-fry quickly, ensuring the tteok are evenly coated with the sauce. This will help the tteok absorb the delicious flavors.
Step 10
When the sauce has thickened to your desired consistency and the tteok have turned a lovely brown color, turn off the heat. Serve the finished Pork Rib Tteokbokki beautifully plated and enjoy!
