Fern Preparation
- 230g boiled fern (squeeze out excess water)

- 1/2 Tbsp brown rice oil
- 1 tsp perilla oil
- 3 Tbsp water

Cooking Instructions
Step 1
First, prepare the boiled fern. Cut it into bite-sized pieces, about 5cm long. If it’s too long, it might be difficult to stir-fry, so cut it into appropriate lengths.

Let’s prepare the vegetables for the seasoning. Finely mince the garlic with a knife, and thinly slice the white green onion. The fragrant aroma of the green onion will infuse well into the sauce, making it even more delicious.
Step 3
Now it’s time to make the delicious seasoning sauce. In a small bowl, combine the minced garlic, sliced green onion, soy sauce for soup, toasted sesame seeds, perilla oil, and sugar. Stir well until all ingredients are evenly mixed. Let it sit for about 5 minutes for the flavors to meld.

Add the cut fern to the prepared seasoning sauce and gently mix it by hand. Gently toss to ensure the seasoning coats every piece of fern. Marinating for about 5 minutes will help the flavors penetrate deeper.

Heat a frying pan over medium-high heat and add the brown rice oil and perilla oil. Once the oil is warm, add the seasoned fern and stir-fry for about 1 minute over medium-high heat. At this stage, some of the moisture will evaporate, enhancing the chewy texture of the fern.

Now, add 3 tablespoons of water and reduce the heat to medium. Continue to stir-fry for approximately 3-4 minutes, or until the water has evaporated and the fern is tender. As the water reduces, the flavor of the fern will become more concentrated.
