Main Ingredients- 1 potato (medium size)

Cooking Instructions
Step 1
Wash the potatoes thoroughly to remove any dirt. Soaking them in water briefly before slicing can help remove excess starch.

Peel the potatoes cleanly and rinse them under running water again. After peeling, place the potatoes back in water for a short while to draw out their starch. This prevents them from sticking together when stir-fried and improves their texture.

Slice the potatoes into thin matchsticks. You can use a knife or a mandoline slicer for convenience. Rinse the julienned potatoes in cold water to remove starch, then soak them in a saltwater solution (2 cups water, 1 Tbsp salt) for about 10 minutes. Afterward, drain them in a colander and spread them out on a plate to let some of the moisture evaporate. This step ensures the potatoes will be fluffy and not clumped together when stir-fried.
Step 4
Heat 2 tablespoons of cooking oil in a pan over medium heat. Add the drained potato matchsticks and stir-fry until the potatoes become translucent and tender.
