Main Ingredients
  • 1 potato (medium size)

  • 2 cups water
  • 1 Tbsp salt
  • 2 Tbsp cooking oil

Cooking Instructions

Step 1

Wash the potatoes thoroughly to remove any dirt. Soaking them in water briefly before slicing can help remove excess starch.

Step 2

Peel the potatoes cleanly and rinse them under running water again. After peeling, place the potatoes back in water for a short while to draw out their starch. This prevents them from sticking together when stir-fried and improves their texture.

Step 3

Slice the potatoes into thin matchsticks. You can use a knife or a mandoline slicer for convenience. Rinse the julienned potatoes in cold water to remove starch, then soak them in a saltwater solution (2 cups water, 1 Tbsp salt) for about 10 minutes. Afterward, drain them in a colander and spread them out on a plate to let some of the moisture evaporate. This step ensures the potatoes will be fluffy and not clumped together when stir-fried.

Step 4

Heat 2 tablespoons of cooking oil in a pan over medium heat. Add the drained potato matchsticks and stir-fry until the potatoes become translucent and tender. For added flavor, you can sprinkle a little black pepper. Once cooked, transfer the stir-fried potato noodles to a plate for a delicious side dish!
