Main Ingredients
  • Pork belly 100g
  • Green onion 15g (chopped)
  • Cabbage 50g (cut into bite-sized pieces)
  • Onion 1/2 (sliced)
  • Udon noodles 200g
  • Salt 0.5 Tbsp
  • Pepper to taste

Special Sauce
  • Soy sauce 1.5 Tbsp
  • Oligosaccharide 1 Tbsp (sweetness adjustable)
  • Tonkatsu sauce 1 Tbsp (steak sauce can be substituted)
  • Oyster sauce 2 Tbsp
  • Ketchup 2 Tbsp
  • Mirin 3 Tbsp (or cooking sake)
  • Minced garlic 0.5 Tbsp

Cooking Instructions

Step 1

First, let’s make the special sauce that is the key to this delicious stir-fried udon! In a bowl, combine 1.5 Tbsp soy sauce, 1 Tbsp oligosaccharide, 1 Tbsp tonkatsu sauce (you can substitute with steak sauce!), 2 Tbsp oyster sauce, 2 Tbsp ketchup, 3 Tbsp mirin, and 0.5 Tbsp minced garlic. Stir everything together until well combined. You can adjust the sweetness and saltiness to your preference for an even more delicious taste.

Step 2

Now, let’s prepare to stir-fry. Lightly oil a heated pan and add about 15g of chopped green onion first. Sauté over medium-low heat until fragrant green onion oil is released. This will add a subtle green onion aroma to the entire dish, making it much tastier.

Step 3

Once the green onion is fragrant, it’s time to add the prepared vegetables and pork belly. Add 50g of cabbage cut into bite-sized pieces, 1/2 sliced onion, and 100g of pork belly (cut into manageable pieces) to the pan. Stir-fry over high heat until the pork belly is browned and the vegetables’ sweetness is released.

Step 4

When the meat and vegetables are partially cooked, it’s time to season them. Sprinkle 0.5 Tbsp of salt and an appropriate amount of pepper to taste. This step will further enhance the flavors of the ingredients.

Step 5

Now, we’ll add the chewy udon noodles to stir-fry. Briefly blanch 200g of udon noodles in boiling water. Be careful not to overcook them, as they can become mushy during stir-frying. Drain the udon noodles and add them to the pan, mixing them well with the other ingredients.

Step 6

Once the ingredients are well combined, pour all of the prepared special sauce into the pan. It’s important to ensure the sauce coats all the ingredients evenly.

Step 7

This is the final step! Stir-fry over medium heat for about 2-3 more minutes, allowing the sauce to deeply penetrate the udon noodles, vegetables, and pork belly. The key is to stir constantly to prevent the sauce from burning. You’ll achieve a glossy and delicious stir-fried udon!
