While there are many variations like beef or clam mallow soup, the one made with dried shrimp offers an unparalleled depth of flavor and umami. Soup Ingredients
- 150g fresh mallow leaves and stems
- 12 dried shrimp
- 1/2 stalk of scallion (green onion)
- 1/2 red chili pepper
- Rice water (for washing mallow)
Seasoning
- 2 Tbsp Beomilkong soybean paste (adjust quantity if using homemade doenjang)
- 1/2 Tbsp minced garlic
- 600ml anchovy-kelp broth (or rice water)

Cooking Instructions
Step 1
Prepare and wash the mallow: Scrape off the tough outer skin from the mallow stems with a knife or peel it off by hand. Place the cleaned mallow in rice water and rub it gently with your palms while rinsing multiple times. This washing method helps reduce any bitterness and makes the mallow tender.
Step 2
Boil the soybean paste broth: Pour 600ml of anchovy-kelp broth into a pot and bring it to a boil over medium heat. Once the broth is boiling, place 2 Tbsp of Beomilkong soybean paste in a sieve and dissolve it into the broth. Add 1/2 Tbsp of minced garlic as well. Stir the soybean paste until fully dissolved and let it simmer for a moment.
Step 3
Add mallow and dried shrimp and simmer: Once the soybean paste broth is simmering, add the prepared mallow, 12 dried shrimp, 1/2 thinly sliced scallion, and 1/2 red chili pepper. Bring to a boil over high heat, then reduce the heat to medium-low. Simmer for about 10 minutes until the mallow is fully cooked and the flavors have melded beautifully. Taste and adjust seasoning if needed by adding a little more soybean paste or salt. Your savory and refreshing dried shrimp mallow soup is ready!
