Main Ingredients
  • 4 fresh eggs
  • 1 piece of carrot (approx. 1/4 of a carrot)
  • 1/3 stalk of green onion
  • 1/2 tomato (or cherry tomatoes)
  • Shredded mozzarella cheese, to taste

Seasoning & Garnish
  • Pinch of fine salt
  • A sprinkle of dried basil
  • Ketchup (for serving, optional)

Cooking Instructions

Step 1

Crack the 4 fresh eggs into a bowl. Add a pinch of fine salt. Whisk gently with a fork or whisk until the yolks and whites are well combined, creating an egg mixture. Avoid over-whisking; just ensure the ingredients are blended.

Step 2

Wash the carrot, peel it, and then julienne it into very thin strips. Finely chop the green onion. Dice the tomato into bite-sized pieces (about 1-1.5 cm cubes).

Step 3

Heat 1-2 tablespoons of cooking oil in a non-stick pan over medium-low heat. Use a paper towel to spread a thin layer of oil evenly across the pan. Add the julienned carrots and sauté until they are slightly tender. Sautéing the carrots brings out their natural sweetness and improves their texture.

Step 4

Once the carrots are slightly cooked, make space in the center of the pan. Pour in a portion of the prepared egg mixture using a ladle. As the egg begins to set, gently tilt the pan to spread the egg mixture to the edges, or carefully flip it to cook both sides until lightly golden. Transfer this cooked egg crepe to a separate plate.

Step 5

Add a little more cooking oil to the same pan and pour in the remaining egg mixture. Swirl the pan to create a thin, even layer of egg. Sprinkle the chopped green onions evenly over the egg. Cook over medium-low heat until the egg is almost set.

Step 6

When the egg is nearly cooked, evenly sprinkle the diced tomatoes and mozzarella cheese over the egg base. Place the previously cooked carrot egg crepe on top. Sprinkle with dried basil and then cover the pan with a lid or another pan, immediately turning the heat to very low or off. The residual heat will melt the cheese perfectly.

Step 7

Once the mozzarella cheese is fully melted and all the ingredients are melded together, turn off the heat. Cut the ‘pizza’ into 4-5 equal portions. Serve with your favorite dipping sauce (like ketchup or hot sauce) for extra flavor.

Step 8
