Quesadillas are a fantastic snack that can be prepared anytime with just tortillas! They’re a joy to make and incredibly delicious for everyone, especially kids. This recipe uses up leftover vegetables and ham, making it a nutritious and tasty treat.
Ingredients
- 2 Tortillas
- Leftover vegetables (bell peppers, mushrooms, onions, etc.)
- Homemade ham or your favorite meat (bacon, chicken breast, etc.)
- A little grapeseed oil
- Plenty of pizza cheese

Cooking Instructions
Step 1
First, prepare your vegetables for the quesadilla. You can use any leftover veggies you have in the fridge, like bell peppers, mushrooms, or onions. Chop them into small, bite-sized pieces.

Prepare the tortillas. Lightly toast the tortillas on a grill pan or frying pan over medium-low heat. This step adds a delightful chewy texture and nutty flavor. (Optional)
Step 3
Heat a pan over medium heat with a little grapeseed oil. Add your prepared vegetables and ham (or meat) and stir-fry until the vegetables soften and the ham is lightly browned. Sauté until the vegetables are tender and the ham is golden.

Once the vegetables and ham are nicely sautéed, add the tomato ketchup or pizza sauce. Stir everything together to ensure the sauce coats the ingredients evenly.

Now it’s time to assemble the quesadilla! Place one lightly toasted tortilla onto the pan. Sprinkle a generous amount of pizza cheese over it. The cheese will melt and help bind everything together.
