One-Pan Eggplant Pizza Recipe

Main Ingredients
- 1 medium eggplant
- 1/4 onion
- 1/4 bell pepper (any color)
- 1/2 sausage (your favorite type)
- 1/2 tomato (cherry tomatoes work well too)
- 4 Tbsp cream cheese
- Generous amount of mozzarella cheese (adjust to your liking)
- 2 Tbsp breadcrumbs

Cooking Instructions
Step 1
First, prepare the vegetables. Chop the onion and bell pepper into 1cm pieces. Slice the sausage into bite-sized pieces (about 1cm thick), and similarly slice the tomato. (If using cherry tomatoes, halve them.)
Step 2
Wash the eggplant thoroughly, then slice it diagonally or into rounds about 0.5cm thick. Sprinkle salt and pepper evenly on both sides of the sliced eggplant. This helps to draw out moisture and season the eggplant.
Step 3
Heat the pan over medium heat and melt the piece of butter. Once melted, place the seasoned eggplant slices in the pan and cook for a few minutes on each side until lightly golden brown and slightly softened.
Step 4
Once the eggplant is partially cooked, push it to one side of the pan. Add the chopped onion, bell pepper, sausage, and tomato to the pan. Stir-fry everything together. As the vegetables release their moisture, add the minced garlic and sauté until fragrant. Lightly season with salt and pepper.
Step 5
Spoon the cream cheese (4 Tbsp) over the cooked vegetables and sausage in dollops. Generously sprinkle mozzarella cheese on top. Finally, lightly sprinkle the breadcrumbs for added crispiness. Once the cheese starts to melt, gently press down with a spatula while it cooks.
Step 6
Cover the pan with a lid and reduce the heat to low. Cook for another 2-3 minutes, or until the cheese is completely melted and bubbling. Carefully slide a spatula underneath the pizza to lift it and transfer it to a serving plate. Enjoy your delicious eggplant pizza immediately while it’s hot!
