- 3 Tbsp cho-gochujang (spicy sweet chili paste)
- 2/3 Tbsp plum extract
- 3 Tbsp mashed ripe persimmon
- 1 Tbsp gochugaru (Korean chili flakes)
- 2 cloves minced garlic
- 2 Tbsp vinegar
- A little sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First step towards a delicious clam bibimbap! Finely chop the cucumber, Cheongyang chili pepper, and green onion. Also, mince the garlic beforehand, as this will make the cooking process much smoother.
Step 2
Shred the konjac jelly into thin strips for a chewy texture. Usually, one package of konjac has a generous amount, making it versatile for various dishes. Briefly blanch the konjac in boiling water with a little vinegar to remove any unique odor and enhance its taste.
Step 3
I’m using pre-cooked and frozen clams for this bibimbap. Using pre-prepared clams makes assembling the bibimbap even more convenient. If you’re using fresh clams, make sure to wash them thoroughly and cook them before proceeding.
Step 4
I’ve prepared a ripe persimmon to add a special flavor to the sauce. Adding persimmon to the sauce will provide a deeper and smoother sweetness. Combine all the sauce ingredients in a bowl.
Step 5
Mix the prepared persimmon with the other sauce ingredients thoroughly to create a delicious clam bibimbap sauce. It’s best to mash the persimmon gently as you mix to ensure it’s well incorporated and lump-free.
Step 6
In a large bowl, combine the shredded konjac, sliced cucumber, and cooked clams. Add a generous amount of the homemade sauce. Gently mix everything together so the sauce evenly coats all the ingredients. Be careful not to mix too vigorously, as this could break the clams.
Step 7
Now, almost done! Place the washed lettuce leaves on top of the warm rice, and then generously top with the mixed clam salad. For an extra touch of flavor, you can add seaweed flakes or more sesame seeds. Enjoy a hearty and delicious meal with this elegant clam bibimbap!
