First, heat 1 tablespoon of cooking oil in a pan over medium-low heat. Add the chopped green onions and sauté gently to create ‘green onion oil’ – this infuses the oil with a wonderful aroma. Once the green onions are fragrant and slightly softened, add the chopped kimchi and 1 tablespoon of gochugaru. Stir-fry everything together for about 3-4 minutes, ensuring the kimchi is coated evenly with the oil and chili powder. Keep stirring to prevent burning, until the kimchi becomes vibrant in color and tender.

Step 3

Bring a pot of water to a boil. Gently add the tofu and blanch for about 1 minute. This step helps to firm up the tofu, making it easier to handle and slice without it breaking apart.
