Main Ingredients
  • 1 Enoki mushroom (trimmed and separated into 10-strand portions)
  • 5-6 Perilla leaves (sesame leaves), stems removed and halved
  • 10 slices Thinly sliced pork belly (samgyeopsal)

Sauce Ingredients
  • 1 Tbsp Soy sauce
  • 2 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Water
  • 1/2 Tbsp Sugar
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Gochujang (Korean chili paste)
  • 1.5 Tbsp Oligodang (corn syrup or rice syrup)
  • 1 Tbsp Minced garlic

Cooking Instructions

Step 1

Gently clean the enoki mushrooms by removing any dirt from the base. Separate them into manageable portions of about 10 strands each. Wash the perilla leaves, trim off the tough stems, and cut each leaf in half. Pat them dry.

Step 2

Lightly season the thinly sliced pork belly with a pinch of salt and pepper on each slice. This simple seasoning enhances the natural flavor of the pork.

Step 3

In a small bowl, combine all the sauce ingredients: 1 Tbsp soy sauce, 2 Tbsp mirin, 1 Tbsp water, 1/2 Tbsp sugar, 1 Tbsp gochugaru, 1 Tbsp gochujang, 1.5 Tbsp oligodang, and 1 Tbsp minced garlic. Whisk everything together until well combined and smooth to create your flavorful sauce.

Step 4

Now it’s time to assemble the rolls. Lay one slice of pork belly flat. Place a piece of perilla leaf on top of the pork belly. Then, add a portion of the separated enoki mushrooms onto the perilla leaf. Carefully roll everything up tightly, starting from one end, ensuring the enoki mushrooms are enclosed within the pork belly and perilla leaf. The perilla leaf will help hold the roll together.

Step 5

Preheat a skillet over medium heat and add a very small amount of cooking oil. Carefully place the rolled pork belly and enoki mushroom bundles into the hot pan. Cook, turning them occasionally, until they are golden brown and nicely seared on all sides. The sizzle will be music to your ears!

Step 6

Once the rolls are evenly cooked and have a beautiful golden color, brush them generously with the prepared sauce. Continue to cook for another minute or two over low heat, allowing the sauce to caramelize slightly without burning. This will give them a glossy finish and enhance their savory-sweet flavor. Serve immediately while hot and delicious!
