Cooking Instructions

Step 1

First, let’s prepare the ingredients, which are the foundation for delicious tteokbokki. For chewy rice cakes, lightly rinse the tteokbokki or tteokguk rice cakes under cold water. Cut the fish cakes into bite-sized pieces, and finely chop the green onion to be added at the end. If you’re using frozen rice cakes, they might be quite hard, so it’s best to rinse them lightly under cold water and then soak them in warm water for a short while until they soften. This helps the rice cakes absorb the sauce better and become tender.

Step 2

Now, let’s start cooking the tteokbokki! Place the prepared rice cakes in a frying pan or pot. Add 2 cups of water (measured with a paper cup, approx. 400ml) and 3 tablespoons of sugar. Sugar provides the fundamental sweetness to the tteokbokki and also helps the rice cakes cook to a tender consistency.

Step 3

Once the water comes to a rolling boil, add 1 tablespoon of gochujang, the key to its beloved spicy flavor. After adding the gochujang, it’s crucial to stir well with a spatula or spoon to dissolve it completely into the broth without any lumps. This step completes the basic seasoning for the tteokbokki.

Step 4

Once the gochujang is well dissolved, add 2.5 tablespoons of soy sauce for added savory depth and 1.5 tablespoons of gochugaru for that fiery kick. Now, reduce the heat from high to medium and let the tteokbokki simmer and thicken. To prevent the rice cakes from sticking to the bottom and burning, it’s very important to stir frequently during this stage. Simmer for about 5-7 minutes, or until the rice cakes are soft and the sauce has become rich and concentrated.

Step 5

When the sauce has reduced to a nice consistency and the rice cakes are cooked perfectly, add the pre-cut fish cakes. Mix them well with the rice cakes so that the sauce coats the fish cakes evenly. The fish cakes will soften and add a wonderful texture to the tteokbokki.
