First, rinse the bean sprouts thoroughly under running water to remove any dirt or debris. After rinsing, drain them well in a colander to remove excess water. This is crucial to prevent the dish from becoming watery during cooking.

Heat a lightly oiled pan over medium-high heat. Add the 250g of thinly sliced beef brisket and stir-fry. If the brisket is fatty, you can gently wipe the pan with paper towels between cooking to remove excess grease for a cleaner result.

Continue to cook the beef brisket, turning it occasionally, until it’s golden brown and looks appetizing. Once cooked, remove the brisket from the pan and set it aside on a plate to drain any excess oil.

There will be some residual oil left in the pan from cooking the beef. Add the drained bean sprouts to this hot pan and stir-fry them briskly over high heat. They will begin to soften and wilt slightly.
