Main Ingredients
  • 1/2 cup black olives
  • 10 cherry tomatoes
  • 3-4 cloves garlic
  • 1/2 green bell pepper
  • A small amount of baby greens (for garnish)
  • 1.5 cups store-bought meat tomato sauce

Seasoning & Others
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • 1/2 tsp dried basil

Cooking Instructions

Step 1

First, prepare the ingredients for the pasta. Pit and finely chop the black olives. Remove the stems from the cherry tomatoes and halve them. Mince the garlic or crush it with the side of a knife. Remove the seeds from the green bell pepper and dice it into small cubes.

Step 2

Bring a large pot of water to a boil and add about 1 tablespoon of salt. Add the spaghetti and cook according to package directions (usually 8-10 minutes), but remove it about 1 minute earlier for al dente. Drain the cooked pasta, reserving about 1 cup of the pasta water. (Do not discard the pasta water.)

Step 3

Heat 2 tablespoons of olive oil in a large pan over medium heat. Add the minced garlic and sauté until fragrant, being careful not to burn it. Add the diced green bell pepper and cook until slightly tender-crisp. Then, add the chopped black olives and halved cherry tomatoes, and sauté for another minute.

Step 4

Pour the 1.5 cups of store-bought meat tomato sauce into the pan with the sautéed vegetables and mix well. Bring the sauce to a simmer, then reduce the heat to low and let it cook gently for 2-3 minutes to allow the flavors to meld. Taste and adjust seasoning with salt and pepper as needed. Finally, stir in 1/2 teaspoon of dried basil for a fragrant aroma.

Step 5

Add the drained spaghetti to the simmering sauce. Toss everything together for 1-2 minutes to ensure the pasta is well coated with the sauce. If the sauce seems too thick, gradually add some of the reserved pasta water to reach your desired consistency.

Step 6

Transfer the finished pasta to a serving plate. Garnish with fresh baby greens for a beautiful presentation and an added crisp texture. Enjoy your delicious Olive Tomato Pasta!
