  • 1 Tbsp Minced Garlic
  • 1 Tbsp Soup Soy Sauce (Guk-ganjang)
  • 2 Tbsp Grapeseed Oil
  • 2 Tbsp Perilla Oil

Step 1

It’s crucial to properly rehydrate the dried Gondre. First, soak the dried Gondre in lukewarm water for a short period. Then, fill a pot with plenty of water and boil the Gondre for about 15 minutes. Leave the boiled Gondre in the same water overnight. Soaking it overnight after boiling, instead of immediately cooling it in cold water, helps prevent it from becoming tough or rubbery.

Step 2

Rinse the rehydrated Gondre thoroughly under clean water. When squeezing out the water, don’t wring it out too tightly; aim to remove only about 70% of the moisture. This will ensure the namul remains moist during stir-frying. Place the lightly squeezed Gondre in a bowl. Add the soup soy sauce, minced garlic, and perilla oil. Gently mix and knead the ingredients together with your hands until the seasoning is well distributed. Let it marinate for about 5 minutes to allow the flavors to penetrate deeply.

Step 3

Heat a skillet over medium heat and add a generous amount of grapeseed oil. Add the marinated Gondre namul to the skillet and spread it out evenly. While it’s delicious to eat as is after marinating, stir-frying it further enhances the Gondre’s natural flavor and allows the seasoning to meld beautifully, creating an even tastier dish. Be careful not to burn it while stir-frying.

Step 4

Once the Gondre namul is cooked to your liking, turn off the heat. Now, it’s time to add the finishing touches using the residual heat. Stir in the finely chopped green onions, sesame seeds, and perilla oil. Use chopsticks to mix gently; this prevents the namul from clumping and ensures everything is evenly combined. The fragrant aroma of sesame oil will signal that it’s ready!
