- 1.5 Tbsp Soy sauce
- 1 Tbsp Sesame oil (or Perilla oil)
- 0.5 Tbsp Minced garlic
- A pinch of toasted sesame seeds

Cooking Instructions
Step 1
First, wash the perilla leaves thoroughly under running water to remove any dirt or impurities. Once washed, blanch them in boiling water for about 30 seconds to 1 minute, just until they slightly soften. Be careful not to overcook, as this can make them mushy and diminish their aroma. Immediately after blanching, rinse the leaves in cold water to stop the cooking process and cool them down. Gently squeeze out as much water as possible with your hands. Removing excess water is crucial for preventing the dish from becoming watery and ensuring the seasonings are absorbed well.
Step 2
Add the soy sauce to the squeezed perilla leaves. Soy sauce will enhance the natural aroma of the perilla leaves and add a savory depth of flavor.
Step 3
Pour in 1 tablespoon of sesame oil or perilla oil for a rich, nutty flavor. Using perilla oil (deulgireum) will give the dish a more robust and distinctive aroma.
Step 4
Add half a tablespoon of minced garlic. Be mindful that too much garlic can overpower the delicate flavor of the perilla leaves, so adjust the amount to your preference. Once all the seasonings are in, gently mix everything together with your hands, using a ‘jomul-jomul’ motion. The key is to mix gently so as not to bruise or mash the leaves, preserving their texture.
Step 5
Now, lightly heat a frying pan. Add the seasoned perilla leaves and stir-fry for about 1 to 2 minutes, just to lightly cook them through and meld the flavors. Taste the dish and if it needs more saltiness, add a tiny pinch of salt. Finally, sprinkle with toasted sesame seeds for a finishing touch. Your delicious seasoned perilla leaves are ready to be enjoyed with a warm bowl of rice!
