Marinated Fresh Mozzarella and Tomatoes

This is a dish I absolutely adore, so I decided to make it with fresh mozzarella this time. I’m so happy my basil plants are growing so well on the balcony! Of course, I only pick the leaves… my husband takes care of the gardening. This recipe highlights the fresh, natural flavors of the ingredients and is incredibly easy for anyone to follow, making it perfect for a light meal or a delightful appetizer at gatherings.

Main Ingredients
  • 600g fresh tomatoes
  • 1/2 small onion
  • 5-10 fresh basil leaves
  • 125g fresh mozzarella cheese

Cooking Instructions

Step 1

Prepare one package (600g) of pesticide-free cherry tomatoes. If cherry tomatoes are unavailable, regular tomatoes can also be used.

Step 2

There are two ways to peel the tomatoes. The first is to score them with a cross shape, blanch them in boiling water, and then peel. The second method, which I used this time because I wanted to skip the scoring, is to blanch them in boiling water for 2-3 minutes without scoring, then gently prick the stem end with a toothpick to easily remove the skin. This method is much easier and the skin peels off beautifully. However, be careful not to prick too deeply with the toothpick. I always question myself during this step, wondering if it’s worth the effort, but the clean result is always satisfying!

Step 3

Finely chop half of a small onion and two lemon slices, then add them to the peeled tomatoes. I personally love basil, so I tore about 10 leaves by hand and added them. The fresh aroma of basil complements the tomatoes wonderfully.

Step 4

Now, add all the dressing ingredients: 2 Tbsp of fresh lemon juice, 1 Tbsp of vinegar, 2 Tbsp of stevia (as a sugar substitute), and 1/2 tsp of salt. A helpful tip: buying lemons when they are in season, juicing them, and freezing the juice in portions makes cooking much more convenient. Similarly, freezing pureed radish, ginger, and even onion juice can save a lot of time when you’re cooking!

Step 5

Prepare one package (125g) of fresh mozzarella cheese.

Step 6

Drain any excess water from the mozzarella cheese package and add the cheese to the tomato mixture.

Step 7

Gently toss everything together to combine the ingredients evenly. Be careful not to mix too vigorously, as this can break down the tomatoes.

Step 8

While the tomatoes and dressing flavors meld, take some time to create a label for your jar. A custom label adds a lovely personal touch.

Step 9

Transfer the marinated mixture into a clean jar, affix your label, and your delicious creation is complete! For the best flavor, let it chill in the refrigerator for at least a day.
