Fried Rice Ingredients
- 1/2 bowl of leftover rice (warmed)
- 2 eggs
- 15g green onion (about 2/3 of a stalk, white part preferred)
- 1/4 onion (about 30g)
- 35g carrot (about 1/4 of a carrot)
- Pinch of salt
- 2 Tbsp cooking oil
- 2 Tbsp perilla oil (or sesame oil)
- 1/2 Tbsp oyster sauce
Cooking Instructions
Step 1
Prepare all the ingredients needed for your delicious oyster sauce and egg fried rice. To make the process easier, warm up the leftover rice in the microwave beforehand so it’s not clumped together. Get your two eggs, green onion, onion, carrot, and the flavor-enhancing perilla oil, cooking oil, and of course, the star ingredient: oyster sauce, ready.
Step 2
To add a fragrant aroma to your fried rice, wash and thoroughly dry about 2/3 of a stalk of green onion (focusing on the white part). Finely chop it; this will help release its aromatic oils into the pan, creating a wonderful green onion oil. Using more of the white part will also bring out a sweeter flavor.
Step 3
Onion is a key ingredient that adds sweetness and depth of flavor to fried rice. Take 1/4 of an onion and dice it into roughly the same size pieces as the chopped green onion. Dicing it rather coarsely will give the fried rice a pleasant texture when you bite into it, making it even more enjoyable.
Step 4
If you have any leftover carrot in your fridge, dice it finely and add it to your fried rice. The subtle sweetness and crisp texture of carrots will elevate the overall flavor profile of the dish. It also adds a lovely color, making your fried rice look more appetizing. Prepare about 35g of carrot and dice it finely.
Step 5
Now, let’s start cooking the fried rice ingredients! Heat 2 tablespoons of perilla oil in a pan over medium-low heat. Add the finely diced carrots and sauté until they begin to soften slightly. Sprinkle a pinch of salt to enhance the carrot’s flavor. The nutty aroma of the perilla oil will blend beautifully with the carrots, creating a delicious scent.
Step 6
Let’s make the soft scrambled eggs that will add creaminess to your fried rice. Wipe the pan clean, then crack in the two eggs and whisk them well. Cook over medium heat, stirring with chopsticks to create fluffy scrambled eggs. Transfer the finished scrambled eggs to a separate plate. Keeping them separate prevents them from becoming mushy when mixed with the rice later.
Step 7
In the same pan used for the eggs, add 2 tablespoons of cooking oil and heat over low heat. Add the chopped green onions and slowly sauté until fragrant and you have a nice green onion oil. Once the aroma of the green onion is released, add the diced onion and cook until it becomes translucent. Cooking on low heat prevents the onions and green onions from burning and brings out their natural sweetness.
Step 8
When the sweet aroma of the green onions and onions mingles, add the pre-warmed leftover rice to the pan. Use a spatula to gently break up any clumps of rice and mix it evenly with the onions and green onions. It’s important to stir-fry the rice until it’s fluffy and not sticky.
Step 9
Now for the pièce de résistance of your oyster sauce egg fried rice! Pour 1/2 tablespoon of oyster sauce around the edges of the pan. Sautéing the oyster sauce briefly over high heat can deepen its flavor. After adding the oyster sauce, stir-fry quickly to ensure all ingredients are well combined. If you like, you can add a touch of sesame oil at the end for an extra nutty flavor.
Step 10
Serve the beautifully stir-fried oyster sauce egg fried rice in a serving bowl. Arrange the soft scrambled eggs you prepared earlier in a circle around the fried rice for an appealing presentation. Serve with a side of well-fermented kimchi for a simple yet satisfying meal. Enjoy your delicious meal!
