Cooking Instructions

Step 1

Peel the thoroughly washed sweet potato. Slice it into sticks approximately 0.7cm thick. Soak the sliced sweet potato in water for about 10 minutes to remove excess starch; this step is crucial for achieving a crispier texture when fried or baked.

Step 2

Drain the sweet potato sticks using a colander. Even after draining, some moisture might remain.

Step 3

Pat the sweet potato sticks dry with paper towels. Ensuring they are completely dry is key for the butter to coat them evenly and for them to become extra crispy during cooking.

Step 4

Melt the 10g of butter. You can do this in the microwave for about 30 seconds to 1 minute, or until fully liquid. Adjust the time based on your microwave’s power.

Step 5

Place the dried sweet potato sticks into a resealable plastic bag. Pour the melted butter over them. Seal the bag and shake well to ensure the butter coats each stick evenly. Be cautious as the melted butter might be hot.

Step 6

Line your air fryer basket with parchment paper. Arrange the butter-coated sweet potato sticks in a single layer, ensuring they don’t overlap. This allows for proper air circulation and ensures even crisping.

Step 7

Air fry at 180°C (350°F) for 10 minutes. This initial cooking phase helps to cook the sweet potato through while starting to develop a light golden color on the outside.

Step 8

Remove the sweet potato sticks from the air fryer, and either lift or remove the parchment paper. Return them to the air fryer. Now, air fry for an additional 5 minutes at 180°C (350°F), twice, for a total of 10 more minutes. This double-frying process will yield wonderfully crispy exteriors and tender, chewy insides.
