Cooking Instructions
Step 1
First, take your sirloin beef and gently pat it dry with paper towels to remove any excess blood. This step is crucial for a clean and pleasant flavor. Next, slice the beef into bite-sized pieces that are easy to handle and eat. If slicing feels like too much work, you can also pan-fry the entire piece of beef and then cut it into smaller portions afterward.
Step 2
Lightly season the sliced beef with salt and black pepper. For an enhanced flavor and tender texture, you can marinate the beef for about 30 minutes with a splash of Cheongju (Korean rice wine) or mirin. However, if you’re short on time, simply seasoning with salt and pepper is perfectly fine for delicious results.
Step 3
Now, coat the seasoned beef evenly with sweet rice flour. Using sweet rice flour gives the Gujeon a wonderfully crispy and slightly chewy exterior. If you don’t have sweet rice flour, you can substitute it with a pancake mix (buchim garu) for a similar effect.
Step 4
In a separate bowl, beat the egg until well combined. Dip the flour-coated beef slices into the beaten egg, ensuring each piece is fully coated. Heat a generous amount of cooking oil in a frying pan over medium heat. Carefully place the egg-coated beef slices into the hot pan and cook until golden brown and cooked through on both sides. For a visually appealing garnish, you can mix some finely chopped dried chili threads into the egg mixture before dipping the beef, or sprinkle them on top of the Gujeon as it cooks. If you have fresh green onions, finely chopped ones can also be added as a garnish for extra flavor and color.
