I’ve been really enjoying baking with almond flour lately! It’s gentle on the stomach and great for diets, so I’ve been using it instead of regular flour. Today, I’m sharing a recipe for healthy homemade butter cookies that use almond flour, muesli, and hot chocolate mix powder. Let’s bake some delicious and healthy cookies together!

Common Cookie Dough Ingredients
  • 1/2 cup butter (softened at room temperature)
  • 1/5 cup sugar (granulated or unrefined)
  • 1 large egg (room temperature)
  • 1/3 tsp salt

  • 1/3 cup almond flour
  • 1/5 cup hot chocolate mix powder (or cocoa powder)

Cooking Instructions

Step 1

In a mixing bowl, combine the softened butter, sugar, and salt. Cream them together using a spatula, whisk, or your hands until smooth and well combined, resembling a creamy consistency. Using your hands with disposable gloves can speed up this process.

Step 2

Add the room-temperature egg to the creamed butter mixture and mix until fully incorporated and smooth. Divide this dough evenly into two separate bowls. One portion will be for the basic butter cookies, and the other for the chocolate butter cookies.

Step 3

Let’s start with the ‘Basic Butter Cookie’ dough. To one of the dough portions, add the almond flour. Gently mix with a spatula or your hands until a cohesive dough forms. You can wrap it in plastic wrap or a bag for a brief rest, or use it immediately.

Step 4

Now, we’ll make the ‘Chocolate Butter Cookie’ dough using the same method. To the remaining dough portion, add the almond flour and the hot chocolate mix powder (or cocoa powder). Mix gently until well combined into a chocolate-flavored dough. If the dough seems too stiff, you can add a tiny bit of butter or milk.

Step 5

Prepare piping bags (or zip-top bags with a corner snipped off) with each cookie dough. Line a baking sheet with parchment paper to prevent sticking.

First, pipe the ‘Basic Butter Cookie’ dough onto the prepared baking sheet. You can create various shapes, such as simple rounds or swirls, as desired. Ensure to leave space between cookies as they will spread slightly during baking.

Snip the corner off the piping bag (or zip-top bag) containing the ‘Chocolate Butter Cookie’ dough.

Now, sprinkle some muesli over the piped cookie dough. Gently press the muesli down so it adheres well and won’t fall off during baking. The muesli will add a delightful crunch and nutty flavor.
