Hello everyone! This is Lee Geumsik, here to bring you a hearty meal. Today, we’re making an ‘Authentic Potato Soup’ using plenty of fresh potatoes, a dish that warms you from the inside out. Main Ingredients (for 60 servings)
  • 3kg potatoes (choose large, firm ones)
  • 3 green onions (use both white and green parts)
  • 2 onions (for sweetness and flavor)

Flavor-Enhancing Seasonings
  • 100ml fish sauce (the key ingredient for deep umami flavor in the broth)
  • 100g coarse sea salt (for flavor and seasoning)
  • 50g black pepper (adjust to taste)

Cooking Instructions

Step 1

First, wash the potatoes thoroughly and slice them thinly, about 0.5cm thick. Slicing them too thick will take longer to cook, while slicing too thin might cause them to fall apart, so aim for a moderate thickness. Slice the onions into strips and chop the green onions. It’s good to separate the white and green parts of the green onions.

Step 2

Fill a pot with plenty of water and add dried anchovies and kelp to make a flavorful broth. Once it starts boiling, remove the kelp after 5 minutes, and then remove the anchovies after another 10 minutes to prepare a clear broth. This process will make the broth much deeper and more refreshing. Add the sliced potatoes to the prepared broth and cook over medium heat until the potatoes are tender. Be careful not to let them break apart as you check for doneness.

Step 3

When the potatoes are almost cooked, add all the sliced green onions and onions to the pot and simmer together. Once the vegetables have softened slightly, add the fish sauce, coarse sea salt, and black pepper to season the potato soup. Start with the fish sauce, taste, and then adjust the seasoning with salt if needed. Once the soup comes to a boil, reduce the heat to low and simmer for another 5 minutes to allow the flavors to meld into all the ingredients.
