Instead of the usual kimbap, a sandwich makes for a convenient and light option that doesn’t even require a special lunchbox – just wrap it in parchment paper! This Bacon and Egg Ciabatta Sandwich is packed with thick-cut bacon, hard-boiled eggs, fresh lettuce, and melty cheese. The inspiration struck after seeing a sandwich on Coupang and thinking, ‘I can totally make this at home!’ Get ready to enjoy a delicious, restaurant-quality sandwich from your own kitchen!

Ingredients
  • 2 strips thick-cut bacon
  • 2 hard-boiled eggs
  • 1/2 onion
  • 6 lettuce leaves
  • 4 cherry tomatoes
  • 4 slices mozzarella cheese
  • 2 ciabatta rolls

Cooking Instructions

Step 1

Prepare two ciabatta rolls for this Bacon and Egg Sandwich. (Note: While four rolls were originally prepared, two were used for a different sandwich.)

For the dressing, we’ll use balsamic vinaigrette, which we’ve been saving from a previous salad. Balsamic glaze also works wonderfully here.

Step 3

Wash and prepare about six crisp lettuce leaves. These will add a fresh crunch to your sandwich.

Step 4

Thinly slice half an onion and soak it in cold water for about 10 minutes. This step mellows out the sharp flavor of raw onion, bringing out its natural sweetness.

Cook the thick-cut bacon until nicely crispy. You can use an air fryer or a pan. Drain off excess grease and let it cool slightly on paper towels.

Slice the sweet cherry tomatoes thinly, and also slice the hard-boiled eggs into rounds. Having all your ingredients prepped and ready makes assembly a breeze.
