Step 1

[Preparing the Mallow] First, for the mallow, we’ll use only the tender stems and leaves, discarding any thick, tough parts. Wash the mallow thoroughly under running water, then drain it in a colander.

Step 2

[Tenderizing the Mallow] Place the prepared mallow in a bowl and add 1 tablespoon of coarse salt. Now, rub the mallow vigorously with your hands as if you were washing laundry. This ‘scrubbing’ process helps remove any grassy flavor and makes the mallow exceptionally tender. You’ll notice the mallow wilting and becoming soft. Once it reaches this state, rinse it once or twice under running water to remove excess salt, then squeeze out any remaining moisture.

Step 3

[Slicing the Vegetables] Thinly slice the shiitake mushrooms. Slice the green onion diagonally, focusing on the white parts for a mild sweetness. Slice the red chili pepper diagonally as well; it adds a lovely color at the end.

Step 4

[Sautéing the Beef] Preheat a pot or deep pan over medium heat. Add the beef and 1.5 tablespoons of sesame oil, then stir-fry until the beef is browned and fragrant. Sautéing the beef well is key to developing a deep, savory broth.

Step 5

[Simmering the Broth] Once the beef is no longer pink, pour in 8 cups of water. Bring the broth to a boil, then reduce the heat to medium-low. Cover partially and let it simmer for about 20 minutes to allow the beef flavor to fully infuse the water.

[Skimming the Broth] During the simmering process, skim off any foam or scum that rises to the surface. This step is crucial for achieving a clear and clean-tasting broth.

Reduce the heat to low, cover, and continue to simmer for another 20 minutes, or until the mallow is fully tender and soft. If the soup becomes too reduced, you can add a little hot water to adjust the consistency.

Step 8

[Final Seasoning] Once the mallow is cooked through, season the soup with salt to your preference. Adjust the taste to achieve a balanced flavor with the soup soy sauce and salt.
