Main Ingredients
  • 15 lettuce leaves
  • 1 cucumber
  • 5-6 large spoonfuls of Yeolmu kimchi (young radish kimchi)
  • 5-6 large spoonfuls of Mu saengchae kimchi (radish salad kimchi)
  • 2-3 spoonfuls of seasoned soybean sprouts
  • 2-3 spoonfuls of stir-fried zucchini
  • 8 eggs
  • 6 bowls of cooked rice

Cooking Instructions

Step 1

Wash the lettuce leaves thoroughly under running water. Afterwards, place them in a colander and let them drain completely. Excess water can make the bibimbap taste diluted.

Step 2

Once the lettuce is drained, place it into a large wide bowl (yangpun). Tear the lettuce leaves into bite-sized pieces, about 2-3 cm in size, with your hands. Tearing them instead of chopping preserves a better texture.

Step 3

Wash the cucumber and trim off the ends. Slice it thinly into matchsticks. If you’re not confident with your knife skills, a mandoline slicer works wonderfully for quick and uniform cuts. Add the sliced cucumber to the bowl with the lettuce.

Step 4

Add a generous amount (about 5-6 spoonfuls each) of Yeolmu kimchi and Mu saengchae kimchi to the bowl. If you have seasoned soybean sprouts or stir-fried zucchini in your refrigerator, adding 2-3 spoonfuls of each will make the bibimbap even richer and more flavorful.

Step 5

Heat some oil in a frying pan. Fry all 8 eggs according to your preference – sunny-side up (runny yolk) or over-easy. A slightly runny yolk adds a wonderfully creamy richness when mixed in.

Step 6

Now, add 1-2 large spoonfuls of Gochujang to the bowl to give your bibimbap its characteristic spicy kick. Feel free to add more Gochujang if you prefer it spicier.

Step 7

Pile the 6 bowls of warm cooked rice into the center of the yangpun. Arrange the freshly fried eggs on top. Finally, drizzle generously with 3-4 tablespoons of sesame oil. Mix everything together thoroughly with chopsticks or a spoon until well combined. Your hearty, family-sized Yangpun Bibimbap is now ready to be enjoyed! For an extra touch, sprinkle with toasted sesame seeds before serving.
