Hearty Potato and Egg Salad Sandwich

Cooking Instructions
Step 1
First, prepare the ingredients for the potato salad, the heart of the sandwich. Place 2 extra-large potatoes, 3 eggs, and 1/2 carrot in a steamer. The carrot will soften in about 10 minutes, so remove it first. Steam the room-temperature eggs for 13 minutes, and the potatoes for about 30 minutes, until they are thoroughly cooked and tender.
Step 2
Finely dice the 1/2 onion and soak it in cold water for at least 10 minutes. This step helps to remove the onion’s strong, pungent flavor, making the salad much milder and more pleasant. After soaking, drain the onion well and squeeze out any excess water.
Step 3
Once the steamed carrots have cooled slightly, finely dice them. These will add a pleasant texture and a touch of sweetness to the salad.
Step 4
Peel the hard-boiled eggs and mash them thoroughly using a fork or a potato masher until they are broken down into small pieces.

Peel the tender boiled potatoes while they are still warm. Mash them using a potato masher or a fork until they are smooth and creamy, with no large lumps. Mashing while warm makes it easier and helps them incorporate better into the salad.

In a large bowl, combine the mashed potatoes, mashed eggs, diced carrots, and the well-drained diced onion. Season generously with salt and freshly ground black pepper to taste.

Add 3 tablespoons of mayonnaise and 1 tablespoon of whole grain mustard to the bowl. Gently mix all the ingredients together until well combined and creamy. If the mixture seems too stiff, you can add a little more mayonnaise.
