Main Ingredients
  • 1/2 Onion, thinly sliced
  • 1/2 Potato, thinly sliced
  • 1 Egg, lightly beaten
  • A small amount of Green Onion, finely chopped

Seasoning Ingredients
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Sugar
  • 6 Tbsp Water

Cooking Instructions

Step 1

First, wash and prepare the potatoes and onion. Peel the potatoes or wash them thoroughly and slice them into thin matchsticks. Slice the onion similarly. Lightly grease a pan with cooking oil and add the sliced potatoes and onion. Stir-fry over medium heat until they become lightly golden brown. Continue stir-frying until the potatoes look slightly translucent.

Step 2

While this recipe is great as a vegetarian dish, if you enjoy meat, this is the perfect time to add some minced pork or beef that has been marinated in soy sauce. Stir-fry it together with the potatoes and onions until fully cooked for a richer and more delicious potato rice bowl. If adding meat, ensure it’s cooked through along with the vegetables.

Step 3

Once the sliced potatoes and onion are almost cooked through, pour in all the pre-mixed seasoning ingredients (2 Tbsp soy sauce, 2 Tbsp sugar, 6 Tbsp water) into the pan. Stir well to ensure the seasoning coats the ingredients evenly, and bring it to a simmer.

Step 4

As the seasoning begins to bubble in the pan, slowly drizzle the beaten egg in a circular motion around the edges of the pan. This allows the egg to cook and naturally meld with the other ingredients. Since a rice bowl is best with minimal sauce, continue to simmer over low heat until the sauce has reduced and is mostly absorbed, leaving a thick consistency. Finally, garnish with the chopped green onions and serve. Spoon over warm rice and enjoy your delicious meal!
