In this relaxed spring break season, I decided to make a simple kimchi stew for myself and relax in front of the TV. It was 11 PM when my husband came home from a long day at work. ‘Honey! I haven’t had dinner yet.’ ‘You haven’t eaten dinner yet?’ It must have been a hectic day. He seemed very busy. Luckily, I had already prepared the kimchi stew. I took out some napa cabbage and lettuce from the fridge for wraps. I warmed up leftover rice in the microwave and quickly set out the side dishes we had. It’s a simple yet satisfying meal that shows your love and care.

Wraps (Napa Cabbage and Lettuce)
  • 1 head of fresh spring cabbage (Napa cabbage variety)
  • 1/4 head of regular cabbage
  • Dipping sauce, for serving

Tofu Kimchi Stew
  • 1/2 block of firm tofu
  • 1/4 portion of well-fermented kimchi
  • 70g pork (belly or shoulder recommended)
  • A small bunch of green onions
  • A little soybean oil

Cooking Instructions

Step 1

1. Prepare the wrap vegetables: First, steam the regular cabbage until tender using a steamer. Briefly blanch the spring cabbage in boiling water to retain its crispness. Preparing both vegetables will create a more harmonious and delicious wrap experience.

2. Sauté the stew base: In a pot, heat a little soybean oil over medium heat. Add the pork, cut into bite-sized pieces, and the well-fermented kimchi, chopped into manageable sizes. Sauté them together until the pork is slightly browned and the kimchi is softened. This step is crucial for developing a deep, savory flavor.

3. Simmer and finish the stew: Once the pork and kimchi are well-sautéed, pour in 2 cups of water and bring to a rolling boil. Once the stew is boiling, gently add the firm tofu.
