  • 2/3 cup pinewood honey

Cooking Instructions

Step 1

In a pot suitable for making jam, add 3 cups of frozen blueberries directly. There’s no need to thaw them; use them straight from the freezer.

Step 2

While jam is typically made with sugar, this time I decided to try using pinewood honey instead of sugar for a healthier option. The unique flavor of honey will add a delightful twist.

Step 3

Considering the natural sweetness of blueberries, I added about 2/3 cup of pinewood honey. Feel free to adjust the sweetness to your preference.

Step 4

You can start boiling over high heat. As the blueberries cook, they will release their juices, and the jam will begin to form.

Step 5

Once it starts to simmer around the edges, gently mash the blueberries with a spoon or spatula as you stir. This will help break them down into a smooth consistency.

Step 6

When the jam starts to thicken to your desired consistency, reduce the heat to medium. From this point on, it’s crucial to stir continuously to prevent it from sticking to the bottom and burning. Keep a close eye on it!

Step 7

Once the jam is ready, let it cool slightly. Then, transfer it into sterilized jars and store it in the refrigerator. Since honey was used instead of sugar, refrigerating it is recommended to maintain freshness and prevent spoilage.

Step 8

If you have leftover rice cakes (tteok) from holidays, try toasting them in an air fryer until crispy. Then, top them generously with the blueberry jam. This pairing is surprisingly delightful and might even be better than with bread!

Step 9

Spread a generous dollop of the sweet and fragrant blueberry jam over warmly toasted rice cakes. The burst of blueberry flavor in your mouth will be absolutely wonderful!
