Homemade Chewy and Sweet Hotteok Recipe

Dough Ingredients
- 400cc Flour (approx. 2 cups)
- 100cc Makgeolli (Korean rice wine) or Water (approx. 1/2 cup)
- 30cc White Sugar (approx. 2 Tbsp)
- 2.5cc Salt (approx. 1/4 tsp)
- Cooking Oil, as needed
Filling Ingredients
- 45cc SamonDang (or Brown Sugar) (approx. 3 Tbsp)
- 0.1-0.2cc Cinnamon Powder (a tiny pinch)
- Chopped Nuts (to taste)

Cooking Instructions
Step 1
In a large bowl, combine 400cc of flour. In a separate bowl, mix 100cc of makgeolli (or water) with 30cc of white sugar and 2.5cc of salt until the sugar dissolves. Pour this liquid mixture into the flour. Knead vigorously with your hands until a smooth dough forms. Adjust the consistency by adding a little more liquid or flour if needed.
Step 2
Place the dough in a rice cooker and select the ‘warm’ setting for 15-20 minutes. After this, turn off the power, close the lid, and let the dough ferment for at least 1 hour. This resting period will make the dough wonderfully chewy, resulting in a crispy exterior and soft interior when cooked.
Step 3
To handle the dough easily, lightly wet your hands before dividing it; this prevents sticking. In another bowl, mix 45cc of Samon Dang (or brown sugar), a pinch of cinnamon powder, and your preferred amount of finely chopped nuts to create the filling. Divide the dough into 3-4 portions. Flatten each portion, spoon a generous amount of filling into the center, and carefully seal the edges by gathering them together. Ensure it’s tightly sealed to prevent the filling from leaking out during cooking.
Step 4
Once you have 3-4 filled hotteok dough balls, prepare for cooking. Lightly grease a flat plate or bowl with cooking oil. This greased surface will be used to press down the hotteok, helping it to form a nice, even shape without sticking.
Step 5
Heat a frying pan over medium-low heat and add a generous amount of cooking oil. As soon as you place a hotteok dough ball onto the hot pan, immediately use the greased plate to gently press down on the hotteok, flattening it. Press carefully to avoid bursting the filling.
Step 6
Cook the hotteok, flipping it occasionally, until both sides are golden brown and crispy. While cooking, you can continue to gently press down with the greased plate to enhance the crispiness.
